JOB OVERVIEW
To carry out delegated back of the house cleaning duties, ensuring that the H.A.C.C.P. regulations are upto standard. To ensure that all operating equipment is in an impeccable state and the department is kept organised and tidy.

DUTIES AND RESPONSIBILITIES
  • To carry out daily cleaning duties delegated to you from Daily/Weekly/Monthly Cleaning Schedules, ensuring that the highest standards of hygiene and cleanliness are maintained.
  • To carry out the chemical codes of practice detailed in the soap suppliers manual.
  • To ensure the safe, correct and economic use of Stewarding equipment, including
    • Dishwashing Machines
    • Glasswashing Machine
    • Floor / water cleaning Machine
    • Silver burnisher
    • Potwash machine
    • Card board compactor
  • To effectively clean operational equipment to the required standards, including:
    • Cutlery
    • Crockery
    • Silverware
    • Glassware
    • Pots & Pans
    • Kitchen Utensils
    • Soap
  • To clean Stewarding storage & garbage areas to the required standard.
  • To maintain the canteen, including:
    • Keeping track of the stock
    • Cleaning up before and after lunch/dinner
    • Make sure there is enough food during lunch/dinner
    • Maintaining a wide variety of the assortment
  • To remove food wastage and garbage at agreed intervals to the required standards.To be aware of and implement your responsibilities under the Food Hygiene (HACCP) Regulations.
  • Bottles to be sorted out and keeping the bottle arrea in a proper state
  • To consistently provide and maintain the highest standard of guest care and service.
  • To familiarise yourself with your departmental Service Performance & Product Standards and to be able to demonstrate their application consistently.
  • To have a good knowledge of all hotel facilities and be able to answer guest questions in a quick, polite and helpful manner.
  • To handle any guest complaints or problems promptly and to ensure that all resolved/unresolved incidents are reported to your Supervisor/manager.
  • To adhere at all times to all company, hotel and statutory rules, regulations and policies.
  • To act on your responsibilities for FLS at work.
  • To be security conscious with respect to guest, staff and hotel property/welfare and to report suspicious circumstances to your Supervisor.
  • To cooperate and communicate with your colleagues, Supervisors and Management to ensure effective departmental team work and high morale.
  • To attend any meetings, training sessions or courses that may be beneficial to you and your department on request from your Supervisor/Manager.
  • To follow all procedures set up for the protection of the environment within the hotel and grounds.
  • To be aware and executive on the departmental green-key standards.
GENERAL DUTIES
  • Performs related duties as assigned by the management.
  • Is fully knowledgeable with the hotel's FLS procedures.
  • Make sure that his/her working area is kept clean and tidy at all times.
  • Responsible for reporting immediately to (Assistant) Chief Steward or deputy anything which is to be considered a health and safety hazard.
  • Maintains appropriate standards of dress, hygiene, uniforms, appearance, posture and conduct.
